In each issue, we offer a tempting treat from an area whole foods
chef. The healthy recipe below features the macrobiotic standbys
nori, tamari, and tofu. This recipe was contributed by Warren Wepman,
who also offers some insight into the many benefits of nori, a common
sea vegetable.
Nori is high in calcium, fiber, iron, other minerals, protein,
and vitamins, especially vitamins A and C. It is rich in nutrients.
Compared to dairy products, nori provides up to ten times more calcium
and iron by weight and contains the important trace minerals necessary
for proper digestion of our food. It strengthens the circulatory
system and helps tolower cholesterol. It is especially beneficial
for the kidneys and urinary function, and for the reproductive organs.
It helps to offset tumor development and to protect against radiation.
Mock Fillets of Fish in Nori
½ c whole wheat flour
½ c wheat bran
1 tsp. Chili powder
1 tsp. Kelp powder
Mix together the first four ingredients and set aside. Cut the
nori sheets in fours. Cut 1/4 inch slices of tofu and then cut them
in half. Brush them with the tamari on both sides, and wrap with
a sheet of the nori. Roll these wrapped tofu slices in the first
four ingredients until they are well coated. Fry in the oil until
golden brown, then turn and fry on the other side. Serve hot.
